The title of this recipe is deceptive.  The results are nothing like a bun but more like a small cookie. It is a simple recipe starting with cooked rice and would work for a gluten free diet.

  • 1 cup cooked rice

  • 1/2 cup ground blanched almonds

  • 2 tbsp sugar

  • 1 egg

Combined warm rice with almonds and sugar folded together well added one egg

Using spring loaded scoop made 18 one inch balls- These balls are slightly smaller than ping pong balls.

Baked on parchment paper at 375 for 10 minutes

The best rice for this dish is Arborio (Risotto) rice, but others will work but give a dryer texture.

 If you would make rice buns

Then let the rice cook beforehand and pound the almonds, make it thin with eggs and bake it, then it is good. Put also sugar into it.
